Congratulations to Transition Year student Lydia Crowley who has been selected as a finalist in the “Easy Food Home Cook Hero” competition. Lydia is one of just three finalists in her category and will participate in the National Final in Cooks’ Academy, Dublin at the start of November. Lydia will bake rhubarb muffins with white chocolate custard (injected into the middle of the muffin) and her receipe will be printed in Easy Cook magazine and the Home Cook cookbook next February. We wish Lydia the very best in the competition and look forward to tasting her rhubarb muffins and even trying out the receipe ourselves. Congratulations Lydia!
